Most invoice apps stop working the moment you lose signal, because your invoices live on their server. Here's what “offline” should actually mean, and the trade-offs.
Why most invoice apps need internet
Apps like Zoho Invoice, Invoice Simple and Wave are built around an online account. That's useful if you want to log in from a laptop and a phone. It's a problem if you work on sites with no signal, in a basement shop, on a plane, or simply don't want your client list stored by someone else.
Some of them cache recent data, so you can view things offline. Creating and sending a new invoice usually still waits for a connection.
What to check before you pick one

The honest trade-off
An offline app can't sync between devices by itself. If you invoice from a phone and a laptop on the same day, an online tool is probably the better fit. If you invoice from your phone and want your data to stay there, offline is simpler and more private.
